Today, I’m thrilled to share with you one of my all-time favourite dishes, a true titan of Chinese cuisine: Gong Bao Ji Ding, more commonly known in the West as Kung Pao Chicken. This isn’t just any stir-fry; it’s a dish steeped in history, bursting with complex flavours, and a testament to the masterful balance of Sichuan cooking.
The story of Kung Pao Chicken takes us back to the Qing Dynasty (1644-1912) and a governor named Ding Baozhen. A prominent official who served as the governor of Sichuan Province, Ding was known for his love of a particular dish featuring diced chicken. Legend has it that he either invented the dish himself, or it was prepared by his family’s chef to his specific tastes. The term “Gong Bao” (宮保) translates to “Palace Guardian,” which was Ding Baozhen’s official title. Thus, Gong Bao Ji Ding literally means “Palace Guardian’s Diced Chicken.” It’s a dish that carries the weight of history in its very name.
What makes this dish truly extraordinary is its distinctive flavour profile, known as mala (麻辣), a signature of Sichuan cuisine. This refers to the invigorating combination of ma (numbing) from Sichuan peppercorns and la (spicy) from dried chilies. Beyond the heat, there’s a delicate balance of sweet, sour, and savoury, creating a multi-layered experience that awakens every corner of your palate.
While many versions of Kung Pao Chicken found outside China often lean heavily on sweetness and forgo the authentic numbing spice, my recipe aims to bring you closer to the original, fiery, and deeply satisfying Sichuan experience. It’s a versatile dish, perfect for a quick weeknight meal or an impressive centrepiece for a gathering. I find that mastering this dish gives you a fantastic foundation in understanding the vibrancy of Sichuan flavours.
The star of this dish, naturally, is the chicken. I prefer using boneless, skinless chicken thighs because they remain incredibly tender and juicy during the high heat stir-frying process, absorbing the marinade and sauce beautifully without drying out. Diced into small, manageable pieces, the chicken becomes perfectly coated in the rich, glossy sauce.
Paired with crispy roasted peanuts, aromatic ginger and garlic, and the unmistakable kick of dried chilies and Sichuan peppercorns, each bite is a symphony of textures and tastes. I promise you, once you taste authentic Gong Bao Ji Ding, you’ll understand why this humble chicken dish has captivated hearts (and taste buds) worldwide.
