Hola! I’m thrilled to share one of my absolute favourite dishes from the heart of Andalusia, Spain: Berenjenas Con Miel, or Fried Eggplant with Honey. This dish is a true testament to the rich tapestry of Spanish culinary history, especially the profound influence of the Moors who ruled parts of the Iberian Peninsula for nearly eight centuries. When I first tasted this combination of savoury, crispy eggplant harmoniously balanced with the sweet, sticky drizzle of honey, I was instantly captivated. It’s a simple dish in its execution, yet complex in its historical roots and utterly delightful in its flavour profile.
The origins of Berenjenas Con Miel can be traced back to the medieval period in Southern Spain, particularly in the regions of Granada, Córdoba, and Seville.
