When I think of Vietnamese home cooking, one of the first dishes that comes to mind is Thịt Rim, particularly when used for a pork stir-fry.. The word “rim” in Vietnamese refers to a cooking technique where meat (or seafood) is simmered slowly in a rich, savoury, and slightly sweet sauce until it’s beautifully caramelized and tender. It’s a quintessential comfort food, a staple on nearly every family’s dinner table, and for good reason: it’s deeply flavourful, incredibly satisfying, and pairs perfectly with a simple bowl of steamed jasmine rice.
Thịt Rim is a regular feature in Vietnamese kitchens, with its enticing aroma filling the kitchen as the pork slowly cooks down. While the most famous iteration might be Thịt Kho Trứng (caramelized pork and eggs), which is often prepared for Tết (Lunar New Year) or special occasions due to its longer cooking time, the beauty of Thịt Rim lies in its versatility. Many variations exist, incorporating ingredients like shrimp (Thịt Rim Tôm) or different vegetables, all adhering to that core principle of slow-simmered, caramelized goodness.
The sauce, typically a harmonious blend of fish sauce, sugar (often caramelized first to achieve a beautiful golden hue and depth of flavour), and sometimes a touch of black pepper and garlic, creates an incomparable umami richness that truly defines Vietnamese cuisine. It’s more than just a dish; it’s a culinary embrace, a taste of tradition, and a testament to the Vietnamese philosophy of balancing sweet, salty, sour, and spicy flavours.
Today, I want to share a vibrant and quicker take on this classic: my Vietnamese Scallion Ginger Pork Stir-fry. While traditional rim dishes involve a longer simmer, this stir-fry version captures the essence of those beloved flavours in a fraction of the time, making it an ideal weeknight meal. It foregrounds the aromatic power of fresh ginger and scallions, infusing the tender pork with their pungent, peppery notes, all while maintaining that characteristic sweet and savoury balance that makes Thịt Rim so appealing.
This isn’t a deep, slow braise, but rather a dynamic sauté that caramelizes the pork quickly, coating it in a glossy, flavourful sauce. It’s a testament to how traditional flavours can be adapted for modern, busy lives without sacrificing authenticity or taste. Each bite of this pork stir-fry offers a delightful combination of savoury pork, the zing of ginger, the freshness of scallions, and that unmistakable Vietnamese umami from fish sauce and a hint of sweetness. It’s incredibly addictive and I guarantee it will become a new favourite in your kitchen.
